Peanut Butter Oat Protein Balls + Chocolate centre

This super easy recipe is sugar free and tastes delicious. Whip them up in minutes  - and snack on when on the go! 

I

*********************************************************

      Ingredients       

1 x cup of oats 

1/2  x cup of millet flakes 

1/2 x cup  of raw cocoa 

1/2 x cup of peanut butter 

1/4  x cup of desiccated coconut 

2 tbs of maple syrup  (use 2 majool dates as an alternative)

* add chopped peanuts for crunch*

******************************************

   DIRECTIONS

1) If you are using large unprocessed oats i recommend blending them on a high speed for 2 seconds - it helps bind the mixture 

2) Combine the oats, millet, coconut and two thirds of the peanut nut butter into a large bowl and mix together until the mixture is a nice thick consistency.  If the mixture is too dry - don't be afraid to add a little more peanut butter.  Likewise if the mixture is too wet - try adding a little more oats.

Sit aside to focus on the chocolate centre

3) In a separate bowl combine the raw cocoa with the maple syrup (or dates) and 2 tbs of peanut butter.  Mix until you are happy with the consistency and roll a teaspoon of the mixture into a small ball.  

Once you are happy with the chocolate centre begin adding the oat mixture rolling into a good size ball.

4) Once you are happy with the balls - place them in an air tight container and refrigerate -  eat within 3 days. 

Don't be afraid to play around with the recipe - add your favourite nuts and seeds  and use any nut butter of your choice!

Healthy Black Bean Corn Bread 

I

         *************************************************

      Ingredients       

400g of polenta 

60g Buckwheat Flour 

30g Brown Rice Flour

1 teaspoon Baking Powder

2 teaspoons Bicarbonate of Soda

       ***********************************

3 x large tins of sweet corn (750g)

150g OIlve oil 

450g Oat milk

1 tablespoon of apple cider vinegar

1 tin of black beans 

1 Tablespoon of Sea Salt

Large bunch of Coriander

1/4 cup of diced black olives 

   **********************************

   DIRECTIONS

1) Pre-heat oven to 180 degrees

2) Line a large tin with baking paper

3) Combine all dry ingredients together and mix well and set aside to concentrate on other ingredients

4) Blend 3/4 of the corn in  a processor until it becomes a smooth paste.   Set aside half of a tin to add some crunch.

5) Add Milk, oil  and apple cider vinegar,  to the dry mixture.   Add the rest of the corn, black beans and coriander right at the end and mix well.

6) Pour mixture into  a baking tin and bake for 50-55 minutes
